Pesto Quinoa with Pine Nuts and Sundried Tomatoes
So everyone's looking for Passover recipes but my goal at this time of year is to make regular recipes that happen to be kosher for Passover. It's a bit hard with desserts I must admit (although I enjoy a Pavolva anytime of year), but this is a recipe for a yummy side dish that I made the other night and it happens to be kosher for Passover. And to top it off, it's really simple.

Greek Pasta with Roasted Sweet Pepper Sauce
I love pinterest!! I find such wonderful ideas there. I found a recipe for a roasted red pepper pesto and I decided to adapt it slightly for this pasta I made tonight. It was absolutely delicious!

Thai Salad with Lime Maple Vinaigrette
Back to blogging! Hope that i don't have another long break like this...
Anyway, I was in Florida and had an absolutely delicious Thai salad with seared tuna at a restaurant in Boca called Mozart (dairy & yummy) - I decided I had to try to replicate it. I've now made it for 3 Shabbats meals running and I love it! Hope you enjoy it as much as I do!

Spicy Thai Peanut Noodles
I was perusing pinterest and passed by a recipe that seemed so delicious, I got off my couch and had to give it a try right away! I ended up changing it quite a bit so I figured that I would share it.
As I cooked this for Shabbat, I was thinking about all those living in Israel in this perilous time. Please keep them, as well as our brave IDF soldiers in mind as you are preparing for Shabbat and enjoying your meal.

Pesto Salmon
Tonight was salmon night. I happened to have some leftover pesto sauce from a few days ago and figured - why not combine the two. I wasn't planning on posting on the blog but it was so yummy that I had to share, hence the half-eaten piece of salmon in the photo.

Ginger Lime Salmon

Israeli Couscous with Cranberries, Cinnamon and Mint
I decided extremely last minute to host a Rosh Hashana meal. Over Shabbat, I perused my cookbooks and found a few recipes that sounded appealing with Israeli couscous & cranberries - but they weren't exactly what I was looking for... so on Sunday morning, I winged it. It was my favourite dish (prior to the meal, I kept "tasting" it just to make sure it was "good"). This recipe was made for 16 people, so please, reduce amounts!!

Tortellini with Sundried Tomato and Basil Cream Sauce
I just returned from a wonderful trip to Spain & Portugal. We had an amazing time, but were lacking a bit in the food department (as there's very little kosher there). So tonight I wanted to make a really delicious dinner, but easy as I'm still a bit sleepy & jet-lagged. Also, I don't have too many options in my fridge. This led to tortellini with a sundried tomato and basil cream sauce.

Curried Chickpea Croquettes with Minted Yogurt Sauce
I haven't had to cook dinner in over a week - we've been going out or to my parents' house as we've had extended family in from out of town and then my in-laws came in and they don't have any kosher restaurants in Calgary so restaurants galore! Although a kitchen break is sometimes appreciated and I always love to have family visiting, it's nice to be back on routine and in the kitchen. I've been trying to make healthier items recently, especially since we've been eating out so much. Wanting to avoid heavy cheesy things (which I love but not too healthy) and being that it's the 9 days (no meat allowed), it was hard to be inspired to find something to cook. Someone mentioned chickpea croquettes and I decided to give them a try. Here's my recipe, inspired by IGA recipes website:

Thai Steak Salad
Last night we had a BBQ, but unfortunately one of our guests couldn't make it, so we had 1 leftover cooked steak. Well, I had eaten a steak salad at a restaurant last week, which was delicious, so I figured why not try my own salad. Even my meat & potatoes husband thought it was filling and delicious! Pasta with "meat" sauce and cheese
So my husband is a meat and potatoes kinda guy and definitely is not into fake meat, however I've turned him into a tofu lover so I figured I'd take this a step further - tofu minced meat. I know - it doesn't sound too appetizing, but it's definitely worth giving it a try - it was so yummy!!
Eggplant Caprese Stacks
I'm back to the blogosphere! I've been a bit MIA, quite busy with work but have definitely missed being a foodie!
Well these caprese stacks were a total epiphany as I was having people for Shavuot, was going to make Caprese salad but also had eggplant and a large amount of goat cheese. So these little stacks came to my mind - they were not only beautiful but absolutely delicious. One of my guests made it clear that he doesn't lie eggplant, goat cheese (maybe tomatoes too - I don't remember) and he was still raving about them (even a week later). These are definitely on the list of things to make again (and again and again).

Sundried Tomato, Mushroom and Spinach Frittata Muffins
Tonight I'm all alone for dinner, so I wanted to make something fast & easy. I wasn't planning on blogging but this was a complete creation that came out yummy so why not... However I realize that this recipe is similar to my recipe for these muffins so let me know which you prefer!
