Alex's birthday was a few weeks ago and of course, he asked me to make him his favourite cake (i.e. chocolate cake). I think his favourite is actually the ultimate chocolate cake recipe in the kosher palette cookbook, but there's an easier cake recipe that I know he also loves! This recipe is super easy and delish - it actually calls for chocolate cake mix! But you would never know that it's not completely from scratch because it's so yummy!
Ingredients:
1 package chocolate cake mix
1 package instant chocolate pudding
3/4 cup orange juice
1/4 cup chocolate mint liqueur
4 eggs
1/2 cup vegetable oil
6 oz chocolate chips
Steps (Easy, right):
Preheat oven to 325F.
Mix all ingredients together.
Pour into greased bundt pan.
Bake for 50-60 minutes.
For the icing, I used a combination of icing sugar, cocoa, a dash of mint extract and some water/orange juice. Unfortunately, I didn't pay attention to exact amounts though.
A tip for icing cakes: I always place 4 pieces of parchment paper under the cake (as in the above picture) so that the icing drips onto the parchment and not the plate that I'm serving it on. When the icing has hardened, I remove the parchment and have a beautifully iced cake with no residue on the plate!
