Sesame Parmesan Zucchini


I'm a big fan of zucchini as a side dish - it adds beautiful colour to the plate and it can be delicious. This recipe is yummy and can be served with or without the parmesan to make a perfect accompaniment to any meal.
The picture above shows salmon with soy, ginger and garlic.

Ingredients:
2 zucchini, quartered and cut into 1/4-1/2" slices
2 Tbsp olive oil
1 Tbsp sesame seeds
2 Tbsp parmesan - optional (but if you omit, then add a touch of salt to the recipe)
1 tsp Sriracha hot sauce
dash chipolte, fine herbs, cayenne pepper and garlic plus

Directions:
Preheat oven to 400F.
Mix all ingredients (except zucchini) together. Pour mixture over zucchini (in a baking pan) and make sure to coat well.
Spread in a single layer in baking pan.
Bake 15-20 minutes, until lightly browned. You can broil for ~3 minutes at the end if it's taking too long to cook.
