Crock Pot Peanut Butter Tofu with Veggies


Lately, I've been really busy (hence the lack of blogging) and I've been turning to my crock pot quite often for dinner. I've been searching for crock pot recipes with tofu and low and behold - I found one with peanut sauce, my favourite thing in the world!! Unfortunately, I can't find the actual recipe that I was inspired by but this is what I did (I completely changed the initial recipe):
1/2 - 2/3 cup peanut butter
3 Tbsp soy sauce
2 Tbsp lime juice
2 Tbsp rice vinegar
1 tsp Sriracha (to taste)
1 tsp sesame oil
2 tsp sugar 
2 cloves garlic, minced
1" knob ginger, minced 
1 tsp ground thai spices (I don't actually think you need this but I used them because I had)
1 package tofu, cubed 
Assortment of chopped veggies - I used:
- carrots
- snap peas
- broccoli 
- 1 red pepper 
- mushrooms 
- 1/3 jalapeno pepper  
1 bunch spinach 
Garnish: peanuts, chopped mint and basil 

1) Mix together all ingredients up to (and including) sugar. This is your sauce.
2) Place garlic, ginger, chopped veggies and tofu into crock pot and top with sauce. 
3) Cook on low for 3-4 hours 
4) In the last 15 minutes add spinach. 
5) Serve over rice, garnished with peanuts, mint and basil

Enjoy!!

I prepared this recipe the night before. Put it into the crock pot with a timer on it at 8am and enjoyed it for dinner at 7:30!!
