It's Passover now and I'd like to try to eat healthy, yet still filling food. The health benefits of quinoa are raved about all the time and it happens to be kosher for Passover - so why not. This recipe was inspired by whatever I had in the house and my desire to have goat cheese. Here it is!
Ingredients:
1-2 Tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1" knob ginger, minced
1/3 cup chopped cashews
1 tsp cinnamon (or more to taste)
1 cup quinoa, uncooked
2 cups water
1 cup chopped dried fruit (I used craisins, dates, figs and prunes)
1-2 Tbsp balsamic vinegar (optional)
Goat cheese
Directions:
1) Saute cashews, onion, garlic and ginger in olive oil until softened and cashews have browned. Add cinnamon and saute another minute until fragrant.
2) Mix with uncooked quinoa. Add water. Bring to a boil. Reduce heat and allow to simmer under liquid is absorbed.
3) Remove from heat and allow to cool for a few minutes. Mix in dried fruit, balsamic, goats cheese and additional cinnamon to taste.
