Sundried Tomato, Mushroom and Spinach Frittata Muffins
Tonight I'm all alone for dinner, so I wanted to make something fast & easy. I wasn't planning on blogging but this was a complete creation that came out yummy so why not... However I realize that this recipe is similar to my recipe for these muffins so let me know which you prefer!
Ingredients:
8 eggs
1 cup milk
1/4 cup flour
2 cubes frozen basil (I didn't have fresh but would have used fresh chopped)
1 garlic clove, minced
salt & pepper
fine herbs
1/3 cup cheddar cheese
1/2 cup ricotta cheese
1 package mushrooms, chopped and sauteed
2/3 cup frozen spinach, defrosted and drained
1/3 cup chopped sundried tomatoes
Directions:
Preheat oven to 325F.
Whisk together egg and milk. Add the rest of ingredients. Place in greased muffin tin.
Bake for about 25 minutes.
I froze some - hope they will taste good after...
