Greek Pasta with Roasted Sweet Pepper Sauce
I love pinterest!! I find such wonderful ideas there. I found a recipe for a roasted red pepper pesto and I decided to adapt it slightly for this pasta I made tonight. It was absolutely delicious!
The picture doesn't quite do it justice because I only photographed the food once there was only a bit left...
Ingredients:
Roasted Peppers:
4 long sweet orange peppers
olive oil to drizzle
salt and pepper
Pesto:
Roasted red peppers
2 cloves garlic
1 Tbsp pine nuts
1 tsp dried oregano
2 tsp balsamic
2 Tbsp olive oil
salt and pepper
2 Tbsp feta cheese
Pasta:
1 box pasta, cooked according to package directions
pesto
1/2 cup sliced kalamata olives
1/4 cup sundried tomatoes, slices
1/3 cup feta cheese
pepper to taste
pine nuts to garnish
I would have used basil but I did not have any on hand
Directions:
Roast peppers at 400F in oven until blistered and slightly browned (it took me about 20 minutes but every oven is different) - make sure to turn halfway through.
Once cooled, remove stem and seeds from peppers. Puree peppers and the rest of the pesto ingredients.
Mix pesto with pasta and remaining ingredients.
Enjoy!
